The cooking is rooted in classical French technique, shaped by seasonality, sustainability and zero-waste principles, and inspired by Asian flavours, Scandinavian simplicity and open-fire cookery.

Technique is the foundation — knife work, sauces, the long-built skills that come before any influence is layered on. Everything else is a deliberate choice on top of that.

The result is food that sits nowhere in particular. Grounded, but restless.
